The defined aim of the project is a thoroughgoing study of the main risk factors in an ecological system of growing fresh vegetables and the elaboration of a technical monitoring system with the view to increasing food safety. For achieving the projects’ goal, the following objectives have been established: (1) – evaluation of environment conditions per crops and exploitation systems; (2) - evaluation of the main risk factors from soil, water, plant and product; (3) – dynamic evaluation of the main risk sources for crops studied in the present project; (4) – evaluation and evolution of the soil’s health and its microbiological and enzymatic activity; (5) – elaboration and use of a traceability system for the food safety control of fresh vegetables; (6) – establishment of the HACCP efficiency in the study, control and prevention of risks for assuring food safety and security for ecological vegetable crops; (7) – elaboration of a standard monitoring system for ecological fresh vegetables food safety. This system will be applied in an optimum growing technology. The results will offer appropiate answers to those seven measurable objectives of the present project.

Experiences will develop on three land types – before, during and after conversion – with three categories of vegetable crops – with low, medium and high suitability for ecological growing technologies. Necessary determinations will be made in specialised laboratories.

Concluding, the results will be materialized in complex solutions that will satisfy the projects aim. The solutions will be as follows: the implementation of HACCP, the creation and application of a traceability system, the use of a food safety’s standard monitoring system for ecological vegetable crops. The results of the present project will be developed and disseminated through specific methods and means. Thus, the information will be available for the main beneficiaries – producers, consumers, specialists, experts, decision factors, inspections, academic environment and any other specialists interested in a safe and secure ecological vegetable production.
