RESEARCHES ON THE COMPARATIVE CHARACTERIZATION OF STRUCTURAL COMPOSITION OF LAMBS AND KIDS CARCASSES

The purpose of this study is to compare the properties of meat from the carcass composition of lambs reared in similar conditions of maintenance. This work is a study of correlations between gender, age, live weight at slaughter, breed and managed nutrition and development carcass sensory and physical- chemical properties of the lambs and kids. Bibliographic materials were studied in the international flow of information in areas relating to different regions of the world. In conclusion carcass composition has a significant influence on the quality, the default and the higher requirements of consumer satisfaction.
